Macco (from the Latin maccare, “to crush”) was born as a humble dish of Sicilian rural cuisine.
It was the nourishing breakfast of field workers and the symbolic dish of Saint Joseph’s Day.

500g dried shelled fava beans

Preparation: When Gesture Becomes Tradition
- Soaking: soak the beans overnight
- Slow cooking: sauté the onion gently, add beans, cover with water and cook on low heat
- “Maccare”: mash the beans until creamy
- Finishing: cook spaghetti and toss with the macco and olive oil. In our version, we add scampi
- Final aroma: add wild fennel
- Final touch: a generous drizzle of extra virgin olive oil
Each step tells an ancient story—the same one we repeat every day in our kitchen.
